#44 crushed carrots with harissa and pistachios

I thought this looked like a decent recipe, but wow!! It was way better than expected. The combination of carrot and yogurt was so well balanced in flavor. I used a high quality vegetable broth, which I think helped. I would just prefer a little extra yogurt. I scooped mine up with pieces of matzah, because it's passover, but it would probably be a billion times better with bread. I'm considering putting this on my make again recipe list.
