#274 sweetcorn polenta

i pulled out the polenta for this recipe, but was confused when there wasn’t any called for. this “polenta” is actually just a puree of fresh corn. it had all the sweetness of fresh corn, my only complaint was that the recipe called for too much water and it took too long to cook down as a result. i baked the eggplant in the air fryer instead of deep frying it, i know it’s not the same texture but deep frying eggplant sounded like way too much of a mess. the savory tomato sauce was a great compliment to the sweet polenta.
