lemony farro salad with grapes, pistachios & pickled red onions

from store bought is fine

i saw this recipe and immediately thought it was a grapey, ricotta salata version of the classic charlie bird farro salad, and sure enough that was the inspiration for this dish. farro is delicious in salads, it adds nutty flavor and a chewy texture, and it’s a great way to make it more filling that’s still vegan. for this salad, the farro is cooked with broth and garlic, tossed with a dijon lemon dressing, and then topped with pickled onion, ricotta salata, sliced green grape, and toasted pistachio. it is so so good, definitely equal to the original. i highly recommend both salads.
