#179 satay skewers with quick pickled cucumbers

this recipe calls for chicken, but i love tofu satay so i had to try it. the tofu is initially marinated in a sauce of garlic, soy sauce, maple syrup, chili, makrut lime leaves and lime juice. then, part of this marinade is actually mixed with peanut butter to make a killer peanut sauce. i really could have drank that stuff. then, the tofu is broiled on skewers. on the side is a quick pickled cucumber with salt, lime and rice vinegar. this was the perfect little sour/fresh accompaniment for the dish.

i overall enjoyed the dish, i think it might have liked one better than was a little more authentic in flavor. the one from hot thai kitchen has lemongrass, galangal and coconut milk, which sounds incredible. if anyone else wants to try this with tofu is to use pre-fried tofu. it will hold up a little better on the skewers and lends more texture than the plain stuff.
