#278 corn dutch baby with salsa roja and curtido

this recipe was the reason i wanted to purchase the extra good things cookbook. i mean, corn, cabbage, dutch baby? all things i love. it was a bit of effort to make the salsa and fermented curtido ahead of time, but worth it when all the flavors come together. i would probably recommend a different curtido recipe in general, it needed some vinegar and more salt, the way it was written was not precise enough. the dutch baby itself also was a bit of a fail because it didn’t properly puff. the way the instructions are written, the pan doesn’t get hot enough. i knew i was in trouble when i dumped the batter in and it didn’t sizzle. that said, it all tasted amazing together. i thought about redoing it to perfect the puff, but it was too much work to do it all again.
