clay pot noodles with beet and smoked tofu

This recipe was sitting on my list forever, it sounded like a good way to use some of the bean thread noodles that have been loitering in my pantry. But I was focused on other recipes. I finally came around to making this tonight and it was so good! I thought beet, walnuts and bean thread noodles were an odd combination, but it really tasted like a delicious, satisfying egg roll filling.
