goan butternut squash cafreal

this was the first thing i made (besides boxed mac and cheese) during my second stint on the reservation. it was a tasty recipe, squash is roasted, which makes it a bit less weeknight friendly, and then topped with a delicious sauce made of cilantro, coconut milk, ginger, chili pepper and spices. it’s topped with grilled onions. it was a little on the hot side, but otherwise very tasty. i was so proud to be able to throw this one together while away from home. i did have to retrieve the magic bullet from a neighbor.
