pink mole (mole rosa)

i have been fixated on the idea of making mole rosa since i got back from taxco last month. pink mole is a speciality of the area, but unfortunately i couldn’t try because it has chicken broth in it, and half time time i was a bit queasy anyway. this mole gets its color from beets, and looks so unlike any sauce i’ve seen before. it is nutty, sweet, a bit savory and smokey from chipotles. instead of dark chocolate, it has white chocolate, but its subtle. we made cheese and onion enchiladas with it, but it seems to be very traditional on top of boiled chicken. i can’t wait to try more mole recipes, there are many, many types of mole.
