japanese-ish simmered squash

from power vegetables (no online recipe, but you can find similar online)

this is a simple recipe from the intro of power vegetables. kabocha squash is simmered with a dashi made from soaking kombu in the fridge overnight, mirin and soy sauce. the recipe suggests serving with rice. i thought this was tasty but to make truly craveable it would need some other elements to go with it. maybe some of the pickled mushrooms from later in the intro or some crunchy vegetable.
