#93 5-spice peach and raspberry salad

I knew I had to make this salad before the summer was through, it's been on my list for what feels like forever. It's actually probably only been a month or two. With so much anticipation, maybe I was a little bit let down because I didn't love the combination of the bitter radicchio with the sweet fruit. I also made the mistake doubling said radicchio, which might have contributed to the problem. The base of the salad is a vinaigrette with olive oil, vinegar, five spice and maple syrup, which shallots are added into. That combination of sliced shallots, acid, fat and something sweet comes up again and again in Ottolenghi's salads. I loved this part of it, and if I were to make it again I might use some basic spring mix instead of all the fancy lettuce.
