Several months after buying Shelf Love, I finally cracked it open to make this beautiful carrot recipe. I made this as a starter for a pizza dinner with friends, and it was a big hit. "It doesn't even taste like carrots at all," was the praise. There are plenty of steps here: pickling onions, roasting and peeling a large amount of carrot, smooshing said carrots, which takes some legit work, making an herb pesto and then also mixing lime and yogurt before throwing the whole thing together. It is worth it though, the result is a flavorful, complex and balanced, Ottolenghi at his finest.
