#137 lemon and curry leaf rice

I have never made rice like this before. You spread soaked rice out on a cooking sheet and then pour boiling water with aromatics over it. Then you cover with wax paper, then with aluminum foil and stick in a super hot oven. It seems strange and like a lot of extra work to me, but this recipe yields the most perfectly cooked rice, the kind that sticks straight up because it's so perfect. I ate this with a heavily seasoned dal so it was hard to appreciate the flavor of the rice alone, but when I tasted it it did have the flavor of all of the aromatics: lemon peel, cinnamon, clove and curry leaf. I would definitely use this method again.
