#136 urad dal with coconut and cilantro

In the early days of the pandemic I went to my local Indian grocer and bought what felt like one of every legume in sight. I have not cooked enough beans since then to justify the bean collection I now possess. I've made the Flavor Equation urad dal recipe so I was interested to see how this one stacked up. I enjoyed this one, especially with the fresh coconut, cilantro, fried onion and mustard seed toppings, but I think the Flavor Equation recipe had a little more complex spices. A little extra salt did it a lot of favors.
