#47 root vegetable slaw with labneh

This recipe made a giant bowl of crunchy vegetables. I was kind of confused about just sticking a bunch of vegetables on the side of labneh, but it definitely worked! A mandolin definitely came in handy here. I enjoyed adding a boatload of chopped herbs as well. I'm relying heavily on this type of vegetable while patiently waiting for the spring stuff to come in locally.
