#67 roasted red and golden beets

A really simple salad. It includes a mix of red and golden beets, baby Swiss chard, toasted sunflower seeds, Sherry vinegar, olive oil, garlic and maple syrup. In my opinion, the chervil was the star and made this recipe unique. Sweet beets combined with that little bit of licorice flavor were new to me and a combination worth repeating. A generous dose of salt and pepper were also key to making this delicious.
