#180 sour cherry and walnut stick
from the cookbook
this was a fun, easy loaf to make that only took a couple hours. no day long ferments or folding. much different from the italian bread recipe, this one had buckwheat flour, orange juice, dried cherries and walnuts. in contrast, it’s super dense, and the ideal vessel for delivering some spreadable cheese. the orange juice and buckwheat flour made this really interesting flavor that is hard to describe. the cherries in the bread got sticky and almost caramelized. my only disappointment with this loaf is that it didn’t get the golden crust as pictured in the book; i wonder if that is because i don’t have a commercial oven.
