cucumber-tomato salad with seared halloumi and olive oil croutons

this is basically a greek salad with halloumi instead feta and added homemade croutons. it makes a light salad into an indulgent meal. i ended up unintentionally doubling the feta, which was a great idea. this was really good, and would be even better at peak tomato season.
