when i was in my sophmore year of college, i read about a place called cafe havana in nyc that served elote. i didn’t make it there when i first went to new york during college, but i remember recreating this dish in our dorm room kitchen with my friends. it might have been the same night we set off the fire alarm because someone had cooked turkey grease in the oven and not cleaned it up (and then we didn’t leave, because we knew that was why it went off. and then we had to go to some kind of remediation about listening to fire alarms.) anyways, it is an explosion of salty, sweet, sour and savory flavors. i didn’t get any on my trip to mexico in februrary, but i suspect with our amazing midwest sweetcorn from the farmers marked, picked that same morning, it is just as good.
