This recipe was so good! A ball of burrata is “butterflied,” then topped with raw and charred snap peas, amazing olive oil bread crumbs, mint, basil and a little red pepper flakes. I thought this recipe would be more of a like, but sweet burrata and sweet peas were just so good together, and the fresh mint really set off those flavors. My breadcrumbs were more like mini croutons, and I used a mix of butter and olive oil to make it super flavorful and crunchy. This recipe is a must for anytime you find snap peas at the farmer’s market.
