#182 coconut rice with sambal and okra

now, this dish was delicious! love okra, love coconut flavored rice, so that’s a good start. but the star here was the homemade sambal that the okra was tossed in! it was very easy to make, just combine shallot, dried red chili, fresh chili, garlic, sugar and tamarind in a food processor - it is sweeter so much more complex than the jarred stuff. the coconut rice was also flavored with makrut lime leaves and ginger for an extra layer of aromatics. highly recommend this one, like all of the plenty recipes, you can find in the guardian archives
