#28 tart apple and celery root salad

Without Ottolenghi's cookbooks I would certainly be eating a lot less celery root. it's somewhat expensive to buy, and I haven't been able to find it in the farmer's market yet. It is such an interesting vegetable with the texture of a beet with the flavor of celery. This salad is deliciously balanced with sweet and tart apples, quick pickled onions and poppy seeds. I took the second picture first with some great lighting, but I forgot the chilies so I took the second one in the dark. Basically the first one is more complete, I like the second photo better.
