half-and-half white chocolate raspberry cookies

from vanilla bean baking blog

it’s been a while since i’ve made this style of cookies with rolled together flavors, probably my second favorite kind after chocolate chip. i was going to bring these to a 4th of july bbq, but unfortunately it got cancelled thanks to the host’s likely case of covid. these cookies are delicious though. they use ground raspberry powder, and i added extra flavor with raspberry extract, and a pinch of citric acid for tartness. the white chocolate side simply has finely chopped shards of white chocolate. it goes together perfectly. i also gave some to my neighbor and received a “cookies are amazing” text.
