#176 zingy tofu rice paper rolls

I wanted to see if Ottolenghi had any spring roll recipes, so I googled it and sure enough, found this recipe from an appetizer column from June 12, 2021. I brought these to a watch party of Only Murders in the Building (anyone else obsessed with this show??).

For this recipe, tofu is marinated in soy, lime and maple syrup, then tossed with toasted a mix of pine nut, chestnut, ginger and garlic that have been cooked together. Then they are wrapped up with cilantro, green onion, red chili and lettuce. It’s accompanied by a dipping sauce of soy sauce, sesame oil, lime juice, maple syrup and ginger. I enjoyed these, I found them to be lighter than most spring rolls that are also stuffed with rice noodles, yet still filling from a generous amount of tofu.
