#203 sunshine salad with carrot-ginger dressing

this salad is super similar to an old-school one i made from smitten kitchen just recently, but obviously i needed to try the ottolenghi-fied version. the dressing is almost exactly the same: carrot, miso, soy sauce, rice vinegar, with the addition of lime juice and olive oil. the dressing is used as a base and then it is piled with smashed and salted cucumbers, avocado, red onion, thai basil and sesame seeds. i loved the salad overall, the one thing i wasn’t actually into at all was the thai basil. it just didn’t fit for me. besides that, this is a fun, modern take on a classic.
