#79 caramelized fig, orange and feta salad

I had no idea I could find figs this early in the summer! I practically lunged for them when I saw them at Trader Joe's tonight. I did a quick Google search of what I could make from Ottolengi with this that I could gather ingredients from at TJ's, and this was the first thing that popped up. It's a very sweet salad, more fruit and sugar than arugula. Figs are caramelized in some granulated sugar, then the same for the oranges, which release a juice that becomes the basis for a toasted fennel dressing. The caramelized fruit is arranged with bits of feta, drizzled with the dressing, then topped with arugula and fresh oregano. It was like dessert and dinner in one.
