#183 figs with young pecorino and honey

from the cookbook

this is one of those recipes that the stars have to align to make. figs are only available a couple weeks out of the year, and then young pecorino is not exactly something i can grab at aldi. i did find a young pecorino at my local co-op, and a giant thing of figs at trader joe’s, so the stars did indeed align. the fancy cheese with perfectly ripe figs were pretty spectacular here. everything else was just in the background - basil, argula, honey and olive oil. it doesn’t need anything else, but i do think it would be fun to make a spin on this recipe with some vinegar, shallot, mustard, etc. in the dressing.
