#266 caramel and macadamia cheesecake

since i wasn’t cooking for my mom’s birthday, i decided to go all out by making two desserts. i made a cute little london fog cake, and this decadent cheesecake from the original ottolenghi cookbook. this thing is good! the cheesecake is not overly sweet at all, so it goes amazingly with the rich caramel sauce and the candied macadamia nuts. it was a hit at my mom’s birthday party, i received many compliments. the sauce was probably the hardest part, it really seemed like it wasn’t going to come together, but if you keep stirring and stirring you end up with this smooth caramel sauce.
