tartine bean salad

An amazing bean salad served as a side at Tartine Bakery in New Orleans. I emailed the owner for the recipe and she shared it with me!

Recipe:

4 cups cooked or canned black eyed peas, white beans or a mixture of the three
3 stalks celery, or more as desired
3 carrots, or more as desired

French Dressing
1.25 cups white balsamic vinegar (available at Trader Joe’s)
1 shallot
1 garlic clove
1 T Dijon
1.5 T honey
1 bunch parsley
Flavorless oil
Salt and pepper

 

1. Chop celery and carrots. Combine in a large bowl with beans. 

2. Put all dressing ingredients in the blender except oil. Mix and slowly add oil until desired consistency is reached. Season to taste with salt and pepper.

3. Pour dressing over bean salad until well coated. Save leftover dressing for other salads.
