#241 parsnip and pumpkin mash

this was a very rich mash of pumpkin, parsnip and tons of crème fraîche - so much so that i didn’t add the full amount. it also calls for so much butter that i ended up halving it. don’t worry, even with less fat it was plenty rich. the parsnips are boiled and the squash was roasted until tender while you also make some roasted garlic. the crispy fried onion on top added the perfect textural contrast. overall a delicious dish, fit for a winter holiday celebration.
