#192 roasted butternut squash & red onion with tahini & za'atar

this is a great holiday dish - i made it both for passover and christmas dinner this year. it is a crowd pleaser, and not too difficult to put together. butternut squash and onion are roasted together in a little olive oil, and then topped with a zippy lemon/garlic/tahini sauce, za’atar, chopped parsley and toasted pine nuts. the flavors are very middle eastern and fresh, and the roasted veggies add a warmth to the dish. healthy, yet festive.
