sweet-and-sour red beets with cream cheese and fried pretzels

This recipe sounds bizarre but it is actually one of my very favorites. It’s a take on a boring beet and goat cheese salad, but it has cream cheese, instead of goat, plenty of sourness from red wine vinegar and crunchiness from pretzel and a seed and sugar mixture. So good!
