this was every bit as good as it sounds! i love mac and cheese in many forms, and this stovetop version had all kinds of added twists: za'atar and cilantro pesto, mature cheddar, feta cheese and crispy onions. it was deeply indulgent and delicious. there are instructions for making your own crispy onions, which really is worth it when making a dish that is this much of a gut a gut bomb anyway.
