crispy tofu with cashews and blistered snap peas

this recipe was so good! definitely a weeknight style dish for me, tofu is fried until it’s crispy, and then coated in a super delicious coconut, ginger and garlic sauce. the peas are sauteed and then mixed with mint, scallion and a dash of vinegar and red pepper flake. simple but very delicious.
