#234 burnt eggplant pickle with garlic yogurt

this is a bit of a laborious recipe that requires making burnt eggplant and pickling it in a mixture of spices, tomato paste and onion. fenugreek is very prominent, and it made a lot more eggplant than it probably needed. i can’t say i loved this one, it just was not my favorite way to have burnt eggplant (the mayo baba from sababa is up there).
