#104 freekeh tabbouleh

1 year ago today I made my first proper Ottolenghi recipe, the zucchini and pasta salad. I can't believe I've made it through 100 recipes in a year! I guess you can call it a #Ottoversary.

I made this basic grain salad to use up the rest of my box of freekeh, and some of the produce in my fridge. It's one of those rare recipes that I didn't even have to go to the store for. It's also super healthy, light and low calorie. This is the kind of thing I love to bring to work for lunch. Freekeh was cooked with garlic, allspice, cinnamon, then mixed with cucumber parsley, onion and sumac. And "Super Freak" was played so I could sing my freekeh song.
