roasted squash shells and cheese

this was a tasty weeknight dish. mac and cheese is always so satisfying, but the squash made it lighter, not to mention squash is just good. i roasted the squash and onions ahead of time, which made it come together quickly, and i was surprised that the cheese melted into the squash puree so well. a drizzle of srichacha set the whole thing off.
