#225 butternut squash with sweetcorn salsa, feta and pumpkin seeds

this dish really was easy to make, as i was able to throw it together before a swing shift with pre roasted squash. the corn salsa tasted very fresh, with lime juice, red chili, mint and cilantro. both jared and i agreed it would have been easier to eat if the butternut was cut up into smaller pieces.
