#156 chocolate fudge cake

Happy Birthday Monazza! My fellow internal medicine resident Monazza has been one of my biggest baking fans these past few years. Despite her apparent issues with gluten, she is always encouraging me to bake and samples pretty much everything. I promised I would bake her something, and I had this chocolate fudge cake set aside because it doesn’t have any flour in it. It’s a pretty neat recipe, you use a hot sugar syrup to melt a massive amount of chocolate and butter together, then that is folded into whipped egg whites and bake most of the batter, then it is cooled and the last bit of batter is baked on top, so that the cake has a fudgier layer and a mousse-like layer. It is the perfect cake for an intense chocolate lover, it’s like a fancy, decadent brownie. I will update later on how she likes it (she will like it).
