#77 peaches and speck with orange blossom

The first recipe from the first cookbook! I actually don't eat meat, but my partner Mr. J does so he got to taste the dish in it's intended form. You make a simple dressing heavy on orange blossom, with balsamic vinegar maple syrup and olive oil. Then you mix together baby chard, watercress and endive for the base. You toss the peaches in a little oil salt and pepper, then griddle on high heat so your whole house smokes up. The peaches top the salad along with a hefty amount of speck. It's a play on bitter greens, a very sweet floral dressing, sweet peaches and smoky salty ham.
For a vegetarian version, I subbed the speck for a small amount of feta cheese. It was a delicious, and would recommend to anyone else who wants to avoid meat.
I found the speck at none other than Aldi, and it was nowhere to be found at any fancy store.
