#141 avocado and fava bean mash

How pretty is this bright green puree? I was actually planning to make a different fava Bean recipe, but I was short on the bean so I decided to go with this. It's a puree of olive oil, avocado, fava Bean and lemon, topped with lemon and scallion infused olive oil. Would be perfect with a few other mezze dishes.
