#276 whole roasted carrots with sweet and sour dressing

for my first trip to the farmer’s market this year, i bought corn, dill and sorrel plants, sweet onions, green onions, and a bunch of carrots. i made the greens into two different versions of carrot pesto, and roasted these carrots into this pretty simple ottolenghi recipe. the dressing is made of golden raisins, butter, chopped almond, apple cider vinegar and maple syrup. it’s nothing way out of the ordinary but definitely a tasty way to let some good farmer’s market produce shine.
