#172 lime and poppy seed slaw with curry leaf oil

from OTK Shelf Love

This was a great use of cabbage from the farmer’s market. The base of shredded cabbage, carrot and onion was very classic for a slaw, but the flavorings made it unique: crisped curry leafs in oil, poppy seed, lime, cilantro and sliced red chile. The candied turmeric cashews were the best part, I accidentally made a full batch of them despite halving the recipe, and that turned out to be a good mistake so I was able to top this slaw liberally with them. I tasted the dressing before mixing, and I found it lacking in sweetness, so I added just a touch of honey, which rounded everything out. Next up, I’ll show how this went as a sandwich topping.
