This was so good! It came together fast after a busy work day. I think of it as a modern caprese; it balances salty fresh mozzarella with a sweeter fruit than the traditional tomato. Instead of basil you have fried curry leaves, and then mustard seed lemon juice, shallot, and crushed kasha are the extra flavorful and textural twists. It's sweet, savory crunchy and crisp all at the same time.
