#130 beet, avocado and pea salad

There are some gorgeous photos in this dish in the cookbook so I have been wanting to make this one for some time. I loved the concept, the combination of beets, peas and avocado is spectacular with some sharply acidic onions. That said, I think this recipe needs some tweaks. I think the beets would have been better if they were roasted and then sliced instead of sliced and then blanched. There should have been less beet so there was a slice of avocado for each bite. And then the dressing needed some more sweetness than it had.
