#128 pistachio and rosewater meringues

Here is my rendition of the famous Ottolenghi meringues. I have never even had a meringue before, so it was a little tricky to figure out when they were done, I watched a few YouTube videos which was helpful. These are pretty tasty. They're a sugar bomb but light, and the rose water and pistachio is of course a great combination. It was fun to stretch myself by trying something different today!
