#125 harissa-marinated chicken with red grapefruit salad

Wait, that's not chicken! I veganized this recipe, not knowing if it would work out, but it was fantastic! This recipe calls for chicken marinated overnight and yogurt and homemade harissa and then baked and broiled until crispy. All I did was sub the tofu, and add some chicken bouillon to the marinade to make it a little bit more savory. The protein is combined with grapefruit and arugula, then a sweet grapefruit, anise and maple syrup reduction is poured over top. A beautiful balanced dish perfect for winter when grapefruit is at its peak.
