i’ve made a salad like a few times while staying on the reservation. it’s just everything that i think belongs in a very vaguely mexican inspired salad: corn, pickled onion, carrot, avocado, cilantro, egg, quinoa, queso fresco and of course cooler ranch doritos. for the base i used kale, but anything could work, and then i made a creamy jalapeno, lime and cilantro dressing. this hits the spot after a long clinic day when you’re hungry!
