#143 honey-roasted carrots with tahini yoghurt

There are so many great Ottolenghi recipes that feature carrot! I've already made 12 of them, according to Eat Your Books. My favorite thus far has been "crushed carrots with harissa and pistachios" from Plenty More, recipe #44 in my Ottolenghi journey. This is another great recipe from the same cookbook. The photo for the dish is the carrots on the sheet pan, and when they came out of the oven they looked just like the cookbook picture, something that doesn't happen to me too often. The carrots are seasoned with coriander and cumin seeds, fresh thyme, lots of honey and olive oil. The accompanying sauce of tahini, yogurt, garlic and lemon is a perfect foil. This is another great dish for a mezze spread.
