#124 burnt eggplant with yellow pepper and red onion

Another great lunch dish. A full recipe requires charring two eggplants at the same time on two burners, so you have to open up the windows even if it's 15ish degrees here in Minnesota 😑. Anyways, chopping up the onion, pepper, tomatoes and parsley was relaxing. This salad meets baba ganoush dish was excellent mopped up with some baguette. 🥖
