#121 roasted butternut squash with burnt aubergine and pomegranate molasses

Another dish from my Hannukah party! I've had my eye on this one for a long time, I love roasted butternut squash and pomegranate molasses. I used special honey nut squash that are all the range right now. They are a little version of butternut squash that are definitely more sweet in flavor. The roasted squash paired beautifully with this insanely delicious dip made of pomegranate molasses, yogurt and burnt eggplant. One of my guests exclaimed "oh there's basil in there. that's a good surprise!" And it was.
